3 Hearty Breakfast Recipes for Everyone in a Hurry

Breakfast is the most important meal of the day. Everyone has heard that saying, but unfortunately, breakfast is often the most forgotten meal of the day. Instead of enjoying a hearty, nutritious breakfast, many people opt for simple alternatives on the go because they believe creating a well-rounded breakfast will take too long. That couldn’t be farther from the truth.

To show you just how easy it can be to create an excellent breakfast, here are a few recipes that will have you reinventing the bagel and hitting your busy morning with a bit of extra spring in your step.


Denver Omelet Breakfast Bagel

Ingredients

  • 2  Everything Bagels
  • 4 eggs
  • 2 tbsp heavy cream
  • dash salt and pepper
  • 2 tbsp butter
  • ¼ cup diced ham
  • ¼ cup diced green peppers
  • ¼ cup diced onion
  • 2 slices American cheese

Directions

  1. Split bagels and lightly toast in the toaster oven.
  2. Bring a large skillet to medium heat and add butter.
  3. In a bowl, crack eggs and whisk with heavy cream, salt, and pepper.
  4. Pour into skillet, making sure the egg mixture covers the entire pan. Tilt the pan to make sure the mixture is evenly spread to cook.
  5. Cook for 2-3 minutes, gently lifting the sides with a spatula.
  6. Add ham, green peppers, and onion to an omelet, making sure to spread evenly over the egg mixture.
  7. Gently lift one side and fold in half, cook for 2 minutes, and flip. Cook for 3 minutes.
  8. Remove the omelet from the heat and cut it in half.
  9. Add each omelet to bagels, top with an American cheese slice, and add bagel tops.

Tomato, Basil & Brie Bagel 

Ingredients

  • 2  Plain Bagels
  • 4 oz. Brie Cheese (warmed)
  • 1 large tomato, quartered 
  • 2 leaves fresh basil

Directions

  1. Toast a Plain Bagel and set aside.
  2. Quarter one large tomato and set aside.
  3. Warm up your Brie Cheese in the microwave (in a microwave-safe container) or on the stovetop.
  4. Top Bagel halves with warm Brie and tomato quarters.
  5. Add basil.

Santa Fe Bagel Thins Bagel

Ingredients

  • 1  Whole Wheat Bagel Thins bagel
  • 3 egg whites
  • 4 tbsp. black bean hummus (store-bought or homemade recipe below)
  • 2 tbsp. low-fat sour cream
  • 4 tbsp. tomato salsa
  • Nonstick cooking oil spray

Homemade black bean hummus:

  • 1 can (15 oz.) black beans, rinsed and drained
  • 1/2 garlic clove, chopped
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. extra virgin olive oil
  • 1/4 tsp. cayenne pepper
  • 3/4 tsp. ground cumin

Directions

  1. Separate and toast Bagel Thins bagel.
  2. Place open-faced and top each half with two tablespoons of hummus and 1 tablespoon of low-fat sour cream.
  3. Spray the nonstick frying pan with cooking oil and put it on the stovetop under medium heat.
  4. Beat three egg whites in a mixing bowl and then pour into the heated frying pan.
  5. Once eggs are cooked, place them on an open-faced English muffin and top with salsa.

Homemade black bean hummus: Mince all ingredients together in a food processor until smooth; refrigerate.
